RHODE ISLAND A note from the brewery: Pouring a deep orange/amber color, Himmelblau is rich in lightly-toasted malt flavors while still being light in body and thirst-quenching. This year we tweaked our malt blend, selecting floor-malted Bohemian Pilsner, Munich, Vienna and Carahell malts. Utilizing these malts in a modified single-decoction technique creates layered malt flavors of bread crust, marbled babka and sourdough, making it perfect for stein drinking. At Pivotal, Marzen is also hugely about yeast. This year instead of using our house lager yeast, we introduced a yeast strain from one of our favorite German breweries–a strain that, to us, perfectly balances depth of malt flavor and drinkability. This beer was in our tanks for 9 weeks and is naturally carbonated from our extended lagering period.
