BRAZIL Gypsy brewers Maíra Kimura, Yumi Shimada and Fernanda Ueno are three Brazilian ‘Sansei’ (third generation Japanese who were born in a new country of residence). These talented women are paving a way for other women in the craft beer industry. For this beer they took inspiration from Taiyaki, a type of famous Japanese pastry that is in the shaped of a fish and then baked. The taste is like that of a waffle cone. The beer has a velvety texture with notes of chocolate, vanilla and caramel.
